What does 'dressed weight' mean?

Dressed Weight (also known as carcass or hook weight) is the weight of the animal processing, with the head, hide, hooves, organs and blood removed.

Your Quarter, Half or Whole Beef Box is priced using the dressed weight because this is the industry standard for purchasing a whole animal.

How your Beef Box is prepared

After processing, the carcass is dry aged for around seven days to enhance tenderness and flavour. It is then professionally butchered, with large bones and excess fat removed before your beef is cut, labelled and packaged into premium, freezer-ready portions.

Because your Quarter, Half or Whole Beef Box is purchased using the dressed weight of the animal, the packaged beef you receive will naturally weigh less than the original dressed weight. This is a normal part of the butchering process and ensures you're receiving quality, ready-to-use cuts.
